The best baby beet you will ever grow! Deep red globes, smooth and heavy, develop below short, upright green tops. Just 2 to 2? inches in diameter, they hold well and offer rich flavor. Harvest baby leaves at just 30 days for soups and salad.
But the star is the root itself. Baby beets are ready in just 2 months, succulent and toothsome. Round, heavy, red to the center, they are packed with sugars, suitable for eating fresh or canningand full size just 2 weeks later.
Beets are a cool-weather crop, suitable for spring, fall, and even winter in very mild climates. They tolerate a bit of frost without damage. They are vigorous plants that stand up to disease and bolting. Direct-sow the seeds as soon as the soil can be worked in spring, or in late summer to early fall. Bush beans, lettuce, and onions are good companions in the vegetable garden, as are all the Brassica family, from broccoli and cabbage to kohlrabi and cauliflower.
